Cheddar Hound Meat Loaves

* 1 egg
* 3/4 cup milk
* 1 cup (4 ounces) shredded cheddar cheese
* 1/2 cup quick-cooking oats
* 1/2 cup chopped onion
* 2 tablespoons Cajun Original Garlic Hound Seasoning Sauce
* 1 pound 90 percent lean ground beef
* 2/3 cup ketchup
* 1/2 cup packed light brown sugar
* 1 1/2 teaspoons prepared mustard

1. In a bowl, beat the egg and milk.

2. Stir in cheese, oats, onion and the Garlic Hound Sauce.  Add the ground beef and mix well.  Shape into eight free-form loaves; place in a greased 9 by 13 inch baking dish.

3. Combine ketchup, brown sugar and mustard; spoon over loaves.

4. Bake uncovered at 350 degrees for 45 minutes or a meat thermometer reads 160 degrees.

5. Top with shredded cheese & a dash of Garlic Hound Seasoning Sauce.

 

Garlicky Pork Tenderloin

* 1-2 pork tenderloins (about 2 pounds), trimmed of fat and silver skin
* 3 tablespoons Cajun Original Garlic Hound Seasoning Sauce
* 1 tablespoon vegetable oil
* 1 recipe flavored butter (4 tablespoons softened butter, 1/2 minced shallot, 1 clove minced garlic, 1 tablespoon minced parsley, 1/4 teaspoon salt, 1/4 teaspoon  pepper)

1. Using 12-inch lengths of twine, tie roast crosswise at 1 1/2 -inch intervals. Spread roast evenly with Garlic Hound Sauce at least 4 hours prior to cooking (overnight is best).

2. Adjust oven rack to middle position and heat oven to 375 degrees.

3. Pat roast dry with paper towels, removing all garlic chunks. Transfer roast to a greased wire rack set in rimmed baking sheet. Roast until instant-read thermometer inserted into center of roast registers 135 degrees for medium-rare, 12 to 20 minutes, flipping roast halfway through cooking.

4. Heat oil in 12-inch heavy-bottomed skillet over medium-high heat until just smoking. Place roast in skillet and sear until well browned on four sides, 1 to 2 minutes per side (total of 4 to 8 minutes). Transfer roast to carving board and spread 2 tablespoons flavored butter evenly over top of roast; let rest 15 minutes. Remove twine and cut meat crosswise into 1/2-inch-thick slices. Serve, passing remaining flavored butter (melted) separately.

Turkey Burgers Stuffed with Spicy Grilled Red Onion

* 1 large slice high-quality white sandwich bread, crust removed and discarded, bread chopped into 1/4-inch pieces (about 1/2 cup) 
* 2 tablespoons whole milk
* 1/2 cup red onion, diced
* Olive oil
* 1 1/4 lbs. ground turkey
* 2 tablespoons Garlic Hound Cajun Original Seasoning Sauce
* 4 small sliced hamburger buns (we like whole wheat)
* 4 slices Provolone cheese

1. Mash bread and milk in large bowl with fork until homogeneous (you should have about 1/4 cup).

2. Heat a non-stick skillet to medium and add 1 teaspoon olive oil and the onions.  Meanwhile,
heat your grill to medium/high.

3. Cook until nicely caramelized, about 10 minutes. To the bread & milk mixture, mix in the turkey and the Garlic Hound Sauce.

4. Separate the turkey mixture into 4 equal small portions and form into balls. Make an indentation in each ball and fill with some of the onion, and a dash of Garlic Hound Sauce.

5. Close the pocket and form the meat around the onion filling to make a small patty and grill the patties until done, top with a slice of provolone.

May's Savory Italian Meatloaf

* 1 lb ground beef 
* ½ lb ground pork
* 1 cup milk
* 2 tablespoons Worcestershire Sauce
* ¼ teaspoon dried sage leaves
* ¼ teaspoon salt
* ½ teaspoon ground mustard
* ¼ teaspoon pepper
* 1 garlic clove, minced
* 1 egg
* 2/3 cup bread crumbs
* 1 small onion, chopped
* ¼ cup ketchup
* 2 tablespoons Garlic Hound Cajun Original Seasoning Sauce
* ¼ cup red cooking wine
* ¾ cup parmesan cheese

1. Heat oven to 350 degrees.

2. Mix all ingredients in large cooking bowl and then spread mixture into ungreased loaf pan (8 ½ x 4 ½ or 9x3x5 inches, depending on what you have)

3. Bake 1  hour 10 minutes or until thermometer stuck into center reads 160 degrees
